juice obtained from the olive fruit, better known as olives. Olive
oil is considered to be extra virgin when its extraction process does
not include chemical products or organic solvents and when it is done
naturally, that is, through mechanic procedures. A characteristic
that distinguishes olive oil is that it is the only vegetable oil
that can be consumed raw, without the need to be refined, conserving
